Chilli Feta Eggs
Feta eggs are a viral trend that’s transforming brunch across the globe. The perfect solo breakfast, they can be a great low carb lunch too, eaten with smashed avocado or garlicky fried courgette instead of the tortilla. Try to use the freshest eggs you can find, as older ones will have runnier whites.
Feta eggs have gone viral and we’re here for it! Crispy feta gets topped with a runny egg and then sprinkled with chilli flakes. You can use chilli oil instead of flakes if you want a punchier flavour, and serve your egg on top of garlicky fried courgette instead of bread for a lighter option. Bruschetta Feta Eggs:
Once you’ve cracked the egg into the pan, sprinkle over some dried oregano and continue with the recipe. Meanwhile, chop 1 small tomato, stir in 1tsp olive oil and seasoning. Rub a clove of garlic over a slice of toasted ciabatta. Top with the chopped tomato mixture, then the feta egg.
Low Carb Feta Eggs with Garlic Courgette:
Coarsely grate 1 small courgette and 1 crushed clove of garlic over a medium heat for 8min until softened and beginning to go golden. Stir in a little chopped fresh chilli and tip on to a plate in a small circle. Keep warm, if you like. Clean out pan, complete recipe and serve the egg on top of the fried courgette.
